Guidance for Controlling Listeria in Retail Delis
In June 2015, USDA’s Food Safety and Inspection Service (FSIS) released "FSIS Best Practices Guidance for Controlling Listeria monocytogenes (Lm) in Retail Delicatessens," which provides specific actions retailers can take to decrease the potential for Listeria growth or cross-contamination. FSIS recently released a tri-fold brochure that is a condensed version of the “FSIS Best Practices Guidance” and provides retailers with practical suggestions for reducing the likelihood of Listeria contamination in their establishments. The trifold brochure is also available in Spanish.
